Bringing the Carnival to Your Kitchen, Candy-Apple Bundt Cake

This weekend it was my dad’s birthday, and of course, birthdays mean cake. Short on time, yet still wanting an impressive looking cake, I chose to make a bundt cake. Although they’re simple to make, because of their pan bundt cakes always turn out looking, well, pretty cute. With an glaze drizzled on top it’s easy to make a simple bundt cake magazine-worthy.

In the end I decided to try an apple bundt cake with caramel glaze– I called it a “candy apple” bundt cake!

The cake was simple to make; the most novice baker could do it. However, its super important to oil/butter and then flour the pan well, otherwise the cake will stick and the shape of your cake will be ruined. The cake was baked in an hour, exactly like the recipe said. The only change I would make to the recipe would be the addition of three spices to the batter; cinnamon, cardamon, and nutmeg. IMG_6480

After leaving the cake to cool overnight in the fridge I made the glaze. It was very quick to make and put on the cake, an advantage over icing when in a time pinch. It turned out sweet and caramel-y, perfect! The only thing to mind when making a glaze is to remember to stir it constantly as it cooks, to avoid burning the sugar.

Served with vanilla ice cream the cake was delicious, the sweetness of the glaze balanced by the cake. Disappointingly, the cake was rather bland.

Although I enjoyed the “candy apple” cake, next time I will either add the spices to this recipe or try a different cake. Still, the glaze turned out well, and the combination is one I’ll be sure to repeat.
