Lovin’ from the Oven

“I figured if I was going to make the world a better place I’d do it with a muffin”

These muffins are seriously the BEST. A hint of coffee taste, walnuts and chocolate chips. See the recipe below (and do it fast, your life will be deliciously changed for… ever!) And if you can, get some colourful muffin forms to brighten your day. Spring has arrived here in Calgary, finally, and I just want to jump up and down in excitement. I keep opening the door to feel the temperature, as though it will miraculously disappear- which i wouldn’t put past Canadian weather. Knock on wood and cross your fingers that it’s here to stay. 1/2 c. unsalted butter, softened
1/2 c. brown sugar
1/2 c. white sugar
3 tbsp. instant coffee
2 tsp. vanilla extract
2 eggs
2/3 c. milk
1 3/4 c. flour
1/2 tsp. salt
1 tbsp. baking powder
3/4 c. chocolate chips
1 1/2 c. walnuts, coarsely chopped
Preheat oven to 350 degrees. Grease and flour twelve 3-
inch muffin pan cups. Cream the butter with the sugars,
coffee, and vanilla. Beat together the eggs and milk.
Combine the flour, salt, and baking powder. Alternately
add the wet and dry ingredients to the butter mixture. Stir
just to combine. Add the chips and walnuts.
Fill the tins 1/2 full. Bake 20 minutes. Cool 5 minutes and
remove from tins.
